Spiced Banana Coconut Muffins

These muffins are just so easy to whiz together and are a great morning or afternoon snack for the little ones! They’re even more delicious served warm with some turmeric macadamia butter.

Ingredients

4 ripe bananas
3 organic eggs
1 cup coconut milk
1/3 liquid ghee or coconut oil
1 teaspoon vanilla essence
1/2 cup coconut flour
2 tablespoons finely dessicated coconut
1 tsp turmeric
1 tsp cinnamon
1/2 tsp cardamom powder
1 tsp baking powder
1/2 tsp bi-carb soda

Method

  1. Pre-heat oven to 180°c (fan forced) and lightly grease a 12-hole muffin tin with butter or ghee.

  2. Mash bananas together with the milk, ghee or oil, eggs and vanilla in a large bowl.

  3. In another bowl, mix together the flour and coconut along with the spices, baking powder, bi-carb soda and salt and pepper.

  4. Add the dry ingredients to the wet ingredients and still until well-combined. The consistency will be moist and lumpy.

  5. Spoon the mix into the muffin tin until each hole is about 3/4 full.

  6. Bake in the oven for 20-25 min until the muffins are golden brown and springy to touch.
