Spelt Banana Bread

I’ve tried many banana bread recipes and I think I’ve finally found my favourite after some experimenting. This one is just so simple and wholesome, and it turns out delicious every time! It tastes great just out of the oven with some ghee or butter. It’s a very good one for school lunch boxes.

Ingredients

4 ripe bananas mashed
2 cups wholemeal spelt flour
2/3 cup ghee
1/2 cup coconut sugar or jaggery
2 tsp cinnamon
2 tsp ground cadarmom
2 tsp baking powder
1 tsp bi-carb soda
1 tsp vanilla essence

Method

  1. Pre-heat oven to 180 degrees Celsius and line a rectangular tin with baking paper.

  2. In a medium bowl, mash the bananas well until a soft and even consistency.

  3. Add the vanilla, ghee and sugar and mix well.

  4. In a second bowl, add the flour, baking powder, bi-carb soda and spices and mix well.

  5. Add the dry ingredients to the wet ingredients and combine.

  6. Place mixture into your baking tin and into the oven and bake for 50 mins.
