Spiced Oat Biscuits
This is an easy go-to recipe when I’m looking for a baking activity with my daughter - they’re easy, quick and perfectly messy. They’re also a great sweet treat that’s not too sweet or heavy, perfect with a cup of tea. And usually I have all the ingredients readily available so no planning required! These could be considered dry and rough, so aggravating to Vata. Make sure to use plenty of ghee if you have a Vata aggravation and enjoy with a cup of chai.

Ingredients
1/2 cup ghee
1/2 cup coconut or palm sugar
1 &1/2 cup rolled oats
1 cup spelt or wholemeal flour
1/2 cup raisins
1/4 cup sunflower seeds
1 tsp baking powder
1 tsp vanilla essence
1 tsp cinnamon powder
1 tsp cardamom
1/2 tsp ginger powder
1 egg
Method
Pre-heat oven to 180 degrees celsius (fan-forced).
Mix the rolled oats, flour and baking powder in a large mixing bowl until combined.
In a separate bowl, mix the ghee, egg and sugar until they reach a creamy consistency. Add the spices and vanilla to the mixture.
Add the wet ingredients to the dry ingredients and stir together until well combined.
Line a baking tray with baking paper and spoon small clumps of the mixture onto the tray.
Bake in the oven for about 15 mins, or until they are golden brown.
Leave to cool and enjoy once they have gone hard.
